Valenti joined the Seawolves program prior to the start of the 2024 season as an offensive graduate assistant after spending 2021–2023 with the Clemson Tigers football department as a student intern, where he served as a recruiting assistant working with quarterbacks. In that role, he assisted the recruiting staff with daily operations, worked directly with coaches to organize, evaluate, and analyze recruits, and supported both unofficial and official visits.

In his first season in 2024, Valenti helped guide one of the biggest turnarounds in the FCS as Stony Brook improved from 0–10 (0–8 CAA) in 2023 and a preseason last-place conference projection to an 8–4 (5–3 CAA) record. Offensively, the Seawolves made major strides, increasing scoring from 15.2 points per game in 2023 to 29.6 in 2024, while total offense jumped from 314.2 to 403.9 yards per game. The rushing attack grew from 104.1 to 170.3 yards per game, and passing production increased from 210.1 to 223.6 yards per game. The offense nearly doubled its touchdown total from 19 to 44, setting program records for passing yards in a season, while also producing its most rushing yards and rushing touchdowns since 2019, its most points since 2017, and its most total yards since 2019.

Valenti helped guide several standout individual seasons, including running back Roland Dempster becoming the program’s first Walter Payton Award finalist after finishing third in the FCS and second in the CAA in total touchdowns. He also helped develop tight ends Cal Redman and Cole Bunicci into All-CAA selections.

The momentum continued into 2025 as Stony Brook finished 6–6 overall with a 4–4 CAA mark and a 5–1 home record, its best home performance since 2018. The offense averaged 28.0 points per game (sixth in the CAA) and 385.0 yards per game (fourth in the conference), while running 911 plays, the second-most in the CAA. Stony Brook also ranked third in passing offense at 236.8 yards per game and posted a 90 percent red zone efficiency rate. Valenti additionally helped develop Roland Dempster and Jayce Freeman into All-CAA selections.
